Miyagi Prefecture is the gateway to the Tohoku Region in northern Japan. The prefecture contributed to spreading popular gourmet meals to the metropolitan area. In this cooking workshop held in Miyagi, you can make and eat 'Zunda-mochi' and 'Suppoko,' two of the healthy local dishes. Zunda refers to mashed green soybeans that have a fresh green color and refined sweetness. It is often used to coat mochi (rice cake) and also topped on bread or cakes, regardless of Western and Japanese sweets. Green soybean has low carbohydrate, low calories, but has many isoflavones, folic acid, and minerals. It helps women to maintain their health and beauty.
'Suppoko,' one of the homemade meals in the Tohoku Region, is noodles cooked with seasonal vegetables and fried tofu in a soup. In Miyagi, a local specialty 'umen' noodles are used for Suppoko. Umen noodles are not fried in oil in the manufacturing process. You can take much fiber and protein derived from the vegetables and soybeans.
